The guided tour begins with a historical explanation of this former cloister, listed as a Historic Monument, an architectural masterpiece renovated in 2019 that blends the ancient with the modern.
The tour continues through part of the 3 km of underground galleries, 20 metres below ground, in which the sparkling wines of Les Cordeliers are produced. The history of the quarries and the production method are explained in detail.
The tour ends with a tasting of the vintage wines, accompanied by one of Saint Emilion's famous macaroons, on the mezzanine floor of the 15th-century church.
The tour lasts around 40 minutes on foot, with the option of taking a lift for people with reduced mobility.
A 20-minute tasting of 3 Crémants Blanc de Blanc, Rosé and Blanc de Noir accompanied by a traditional Saint Emilion macaroon. A syrup will be available for children.
